Every year for Christmas, my sister-in-law makes haystacks.  We look forward to them all year and she raves at how simple they are.

So this past year, I watched her make them and they quite literally are one of the simplest treats to make.  She just mixed melted butterscotch chips with chow mein noodles, scooped the mixture into little mounds on parchment paper and let them cool and harden.  That was it.  Simplest treat ever, right?

And since I’m wishing for it to hurry up and finally be spring, I’ve been working on some new spring and Easter treats over here.  I knew that I wanted to make Mini-Egg Bird Nests.  I had a sneaking suspicion that these Easter treats could be made by just adding a few Cadbury Mini-Eggs (aka my FAVORITE Easter candy) on top of the haystacks.  As it turns out, I was right.

So today, I’m sharing just how you can make your very own Mini-Egg Bird Nests.  They are so fun for Easter and I think make perfect addition to your Easter table (if you can hold off on eating them until after dinner, of course!)

Mini-Egg Bird Nests

Ingredients

• 1 bag of butterscotch chips
  • NOTE: If you don’t like butterscotch, you could use chocolate chips or even candy melts for your mini-egg nests.
• 1/2 bag of chow mein noodles
  • Assuming you pick up the standard 12 oz. bag
• 36 Cadbury Mini-Eggs
  • You could also use Jelly Bean eggs, or some other egg shaped candy – but the  mini-eggs are hands down my favorite.

You’ll Also Need

• Cooking spray
• A muffin tin
• Large, microwaveable bowl
• Silicone spatula
• Spoon or ice cream scoop

Directions

• Prepare muffin tin with cooking spray – make sure each well is sprayed.
• Melt butterscotch chips in the large mixing bowl in 30 second increments in the microwave.
  • Heat for 30 seconds, stir, and repeat until melted.
• Pour 1/2 bag of chow mein noodles into melted butterscotch and stir with the spatula until well covered.
  • By stir, I mean more like folding with the spatula.  It will look like you have too many noodles at first, but just keep mixing – they will get covered.

• Use a spoon or ice cream scoop to scoop covered noodles into the wells of prepared muffin tin.
• Add 2-3 eggs on each “nest”.
• Let cool thoroughly.
  • You can stick them in the fridge for about 45 minutes or just leave them at room temperature until the butterscotch is fully cooled and solid again.
• Use a spoon to scoop out each nest before serving.

And that’s it.  You can easily put these together in 15 minutes or less before letting them cool.  They turn out so pretty and there is almost no way to mess them up.

They really are the perfect addition to your Easter menu this year!
