I work hard to be sure to get enough vegetables in throughout the day.  I’m always looking to try new things and mix up the way vegetables are prepared in our house.  I’ll be honest though, I was a little late on the kale train.

Kale wasn’t a part of our diet growing up and when I first learned about it, I wasn’t sure why it was so worth adding to our diets.  What is so good about this super food that everyone is going on and on about?!  Well, according to WebMD, kale is one of the healthiest veggies out there.  In fact,One cup of chopped kale contains 33 calories and 9% of the daily value of calcium, 206% of vitamin A, 134% of vitamin C, and a whopping 684% of vitamin K. It is also a good source of minerals copper, potassium, iron, manganese, and phosphorus” (source).
And, so with that information in hand, I was set to get more kale into my system.  Today I’m sharing an easy recipe that you can use to make kale chips.  Kale has a naturally bitter taste that many people don’t like, but I’ve found that “roasting” the leaves into chips makes them much more palatable.  Bonus: toddlers seem more eager to try it this way as well!

Ingredients

  • A head of kale
  • 1 Tbsp olive oil
  • A pinch of salt
  • A pinch of Italian seasoning, optional

 

Directions

  • Tear leaves away from stem and cut into small-medium pieces.
  • Wash leaves and dry thoroughly with a paper towel.
  • Preheat oven to 350.
  • In a medium bowl, add olive oil and gently massage into the leaves to be sure that they are coated evenly.
  • Sprinkle with salt and Italian seasoning.
  • Line a baking sheet with parchment paper and place kale in a single layer onto the sheet.  Make sure that the leaves are not overlapping.
  • Bake for 20-23 minutes until they reach desired consistency.
