Happy Wednesday, friends; I hope your week is going well!  We’re interrupting our regularly scheduled programming over here today to bring you a really fun and simple recipe that you can use for parties or get-togethers.  (And if you’re planning on throwing a Super Bowl party this year, it’s perfect for that, too!)  This bean salsa dip takes about 10 minutes to put together and is sure to be a crowd pleaser!

One thing I really like about this bean salsa dip is that it is a healthier option for party snack food.  If we’re being totally honest, I tend to gravitate toward baking treats for parties – brownies, cookies, cupcakes, etc.  But the older I get (and the more responsible), or maybe the more my metabolism starts to slow down, I recognize even more the need to have a well balanced party menu complete with sweet things and more hearty things that don’t have quite as much sugar.
This recipe fits the bill.  It’s an alternative to your traditional salsa and is more hearty since it’s got black beans, chick peas, and avocado in it.  It’s also really versatile based on your tastes, so I’ve noted some of the different ways I’ve made it below.

Bean Salsa Dip

Ingredients

  • 1 can black beans
  • 1 can yellow corn
    • I like sweet corn, but any corn will do.
  • 1 can garbanzo beans (chick peas)
  • 1 large tomato, diced
    • Or a can of petite diced tomatoes if you’re short on time
  • 1-2 large avocados, chopped
    • I only had 1 on hand for this bowl of dip and I really wished there was more, so I’d say grab 2 and add them one at a time.
  • 1/2 – 1 cup chopped cilantro, optional based on your taste
  • 1/3 cup olive oil
  • 1/3 cup apple cider vinegar
    • For a less tart taste, use lime juice instead
  • Dash of salt to taste

Directions

  • Chop the avocado (and cilantro and tomatoes if you add them fresh) well.
  • Drain and rinse all the canned ingredients (corn, beans, tomatoes).
  • Mix all the fresh ingredients in a bowl that has a lid.
  • Pour oil and apple cider vinegar (or lime juice) over mixture.
  • Sprinkle with salt.
  • Mix all ingredient until well combined.
    • The easiest way to do this is to put the lid on and shake it up.

And that’s all there is to it.  It is so simple!  It’s perfect for taco night, a chip dip, or to eat alone since the beans really do make it quite hearty and filling.

      Thank you! It is really good and somewhat versatile. Using lime juice instead of ACV gives it a whole other taste, for example!
