Happy Friday friends and welcome to another week of Five Things on Friday!  We’re just going to jump right in today because I’m feeling exhausted.  We’ve had a full and fun week, but I am glad for the weekend.  Anyone else?

This week’s post is full of random things, but that’s allowed on Fridays right?  Let’s jump right in.

We’re Having a Baby!

I shared this here on Wednesday, but in case you missed it, we’re excited to be adding another little one to our team in February of next year!  You can read all the details on that here.  We are beyond thrilled and so incredibly thankful for a healthy pregnancy so far and are looking forward to what the future holds for our growing family!

Delicious Banana Oatmeal Cookies

Has anyone seen all the pins that circulate every single year about the two ingredient pumpkin muffins?  The one where you mix a can of pumpkin with a spice cake mix and go?  A friend reminded me of it recently and so last week I set out to grab the two ingredients on my shopping trip.  Pumpkin? Check.  Carrot cake mix? Check.  Of course, that doesn’t make sense.  But the carrot cake box was right beside the spice cake and of course I grabbed that one by accident.  In fact, the boxes look so similar, I didn’t even notice it until I’d already put Little down for a nap and was getting ready to bake them.

So, we used what we already had in the pantry and ended up with these DELICIOUS banana oatmeal cookies.  You can find the original recipe here.  Trust me, you’ll be glad you made these.  (And they’re toddler approved, FYI.)

An Impromptu Date Night

This one was really fun.  Hubs and I got to go on an unplanned date night last night thanks to one of my sisters who took Little to her house for dinner.  She came over during his nap so I could help her with a fall wreath and was here when he woke up.  Of course he wanted to play and then did not want her to leave.  When she offered to take him to her house for dinner and a bath, I happily packed up some dinner for him, called Hubs at work and we went out to dinner.  It was spontaneous and fun and I was really thankful for it.

Jalapeno Pimento Cheese and Avocado Sandwiches

Aka what I’ve been eating for lunch this week.  I grabbed an avocado for taco night on Monday, but didn’t eat the whole thing so I’ve been adding it to pimento cheese sandwiches this week for lunch.  It is so tasty.  It’s the little things, people.

Pumpkin Everything

Finally, last week I mentioned that I wanted it to be fall, but that it was still feeling like summer in NC.  I’m happy to report that this week has been absolutely beautiful and I am finally feeling like fall and thereby want all the pumpkins.  I saw these beautiful things at Trader Joe’s this week and would have been fine to have walked out with the whole basket.  Don’t worry, I refrained.  But I am getting antsy to get out to a pumpkin farm and possibly even the Farmer’s Market to pick up some pumpkins for the season.  (Of course, they’re calling for it to be hot again this weekend, but I have tasted fall this year and so I’m not even worried about it.)

And that’s all for this week.  Other tid-bits that didn’t make their way into the full post, we’ve got plans to do some home projects this weekend, some family visiting, and hopefully some productivity and rest.  Those are my favorite weekends.  The ones that are full and productive, but end rested and prepared for the week to come.

      Thanks! The cookies are delicious and I agree with avocado! I try to eat it soon after we get home! You can also put like juice on it to preserve it a little longer in the fridge!

      You should!! They are so yummy! I want to use applesauce instead of butter the next time I make them to cut out a little of the extra fat, but even still, they are SO good. Definitely worth a try!

  11. Impromptu date nights are the best! I’m also getting excited about pumpkins and all the fall goodies at the farmers market. I get most excited about all the apples; my family used to go every fall and get boxes and boxes of apples from the farmers market and eat through them so quickly they wouldn’t have a chance to go bad.
